Baked Skin Moon Cake

Baked Skin Pandan Lotus paste Moon Cake

The fillings are the same, home cooked as mentioned earlier. The way of cooking the fillings is the same, just the skin is different. The syrup for the baked skin is homemade too. You know the syrup that is made of lemon? Yes, it is cooked ourselves. Not buying from outside, the texture and taste would be different.

Baked skin red bean is not available. Actually because this is homemade red bean paste is too soft and very difficult to hold the baked skin compared to lotus. Red bean itself has no 胶质. (after bake, the skin wont stick well with the skin) It taste very good but some of our customer says it does not look well so we dont wanna make it.

Market's red bean paste is very sticky and shinny due to excessive amount of sugar and flour. Homemade red bean paste has less sugar and no preservatives therefore is difficult to hold the skin. (Adding sweetening and flour then mo
oncake sure look very very nice and sticks well, but would not be healty.)

Mixed nuts (Wu Ren -Vegetarian)

The making process:
As you can see, the fillings are all fresh and pure nuts. Rather than flour and sugar.

1. Snow Skin Red Bean paste + Carrot Skin

You might ask, why the skin of the moon cake is so yellowish? No worries, it is made of carrot juice. Many people doubt the colour because carrot is supposed to be orange, but it is true. When you mix it with the skin douge, it turns out to be a bit yellowish. Definitely safe to eat, and also healthy!

The red bean paste is cooked from the red bean to the paste. It takes about 2 hours to come out with a paste, not to forget the exhausting hard work. You can actually taste the difference compare to the ones available in the market.

2. Snow Skin Pandan Lotus paste + Pandan Skin *Recommended!*

From lotus paste --> Pandan lotus paste

To prove that fresh pandan juice is used, this is the pandan "tree" in my house. The leaves will be taken when it is necessary. (Even supermarket ones also don't have so fresh)

The green colour looks suspicious to you? It is fresh pandan juice, extracted from 30 leaves from my house's pandan "tree". Not colourings, dont worry. Usually colourings will only requires one or two drops of the essence, here you see a big bowl of pandan juice.

You can actually taste the difference between pandan juice and the pandan essence. The smell and taste is different.

No worries about the skin, it's made of fresh pandan juice. Highly recommended as it is very special, can't get it anywhere in the market. With fresh pandan juice, you are able to taste the difference yourself.

To enquire for further information, drop us a comment and we will get you back as soon as possible. There will be more coming soon, normal skin moon cake is available too. Mixed nuts also available upon request. Don't forget to leave us your email so that we can contact you.

Stay tuned!

Prologue

There will be some selling of homemade food made by my mum. The selling is not for COMMERCIAL purpose, hope you all understand that everything is done manually with HANDS not machine. Only limited quantity on first come first serve basis.

If you take a trip to the market nearby your area, you will find some aunties saying "Hey all these are homemade, I made it myself".

What is HOMEMADE to you?

Food that is home-produced, not machine? Take moon cake as example; do you know that the fillings (red bean/lotus paste) can be purchased in the market these days? Yes, at an incredible low price. Many people would just purchase the filings and bake the skin and claim it as HOMEMADE.

Well, it is house-produced. But have you seen how it is made, by machine? Are the ingredients being washed and picked carefully? No idea. And for your information, the paste could be kept for a long time because it has a lot sweetening and preservatives. (Sweetening helps the food to hold on longer until few months, some until half year) Normal homemade one can ONLY be kept for the maximum duration of 1 week.

SG-kitchen bakes food in chronological processes, not short cut. Take lotus paste as example. First it is carefully washed and picked to ensure no spoiled/unknown dirt in the beans. Later on it is baked from the lotus bean and cooked (after steam the bean and cook for an hour) Cooking mean stirring in pan non-stop for an hour.

Profit Making?

Not much likely to be honest. Even it has, it is not worth actually for all the hard work and hassles. The ingredients do not come cheap recently. Of course we would not go for cheap ingredients just to make profit, it's HOMEMADE and my mum would go for good quality ingredients. It started a few years ago when our close relatives requested my mum to sell the food to them as they would like to give it to their friends as gifts.

Homemade Feel

If you would like to go for nice packaging, nice look, branded, please go for the ones in the market. Homemade food does not look as nice as the ones you can get in the market in terms of packaging. Sometimes if you do realise, the texture of the food is different too.

Please do not compare machine with human hands. Of course handmade food is not perfect in terms of the appearance. It is impossible to get 100% same outcome (food), hands are different from machine. Of course, hands are clean. Machines can produce in bulk quantity whereas it is limited with homemade. We are human, not machines.

That's why the pricing is different. If you feel like going for nice packaging, nice appearance with preservatives and sweetening, branded one - please purchase it somewhere else.

Thank you and please stay tuned for more!
